JALEBIS!
Who wouldn't like this tasty sweet?
It is a special dish in most of our festivals.
The yummy crispy jalebi is very simple to prepare.
Here is a fun fact:According to Hobson-Jobson, the Indian word jalebi is derived from the Arabic word Zulabiya or the Persian zolbiya.This recipe was brought to Medieval India by Persian-speaking Turkic invaders.
A Sanskrit work dating before 1600 CE, lists the ingredients and recipe of the dish; these are identical to the ones used to prepare the modern jalebi.
So knowing this history, let's see how to prepare this.
In a mixing bowl, add
- All purpose flour(Maida)- 2 cups
- Chickpea flour(Besan)- ¼th cup
- Corn flour- 1 table spoon
- Baking powder- 1½table spoon
- Whisked curd- ¼th cup
- Water- according to the consistency
Mix it to a slightly flowy consistency. (Not too thin or thick)
You can use a plastic cover, squeeze bottle or anything which is available to form a cone to dispense the mixture in the oil.
Fill the mixture.
In a pan:
- Heat oil and squeeze the mixture in spiral shape using the cone
For the sugar syrup.
- Add 2-3 cups of sugar in 4-5 cups of water.
Boil it to a thick consistency.
Soak the fried jalebi to the sugar syrup.
Wait for 5-10min.
And hot sweet yum jalebis are ready to serve.
