THAI GREEN CURRY

I'd love to share this favorite recipe of mine,
Thai green curry!
Facts:
Thai curry originates from Thailand. This is a central thai variety of curry. The focus is usually on the colour, texture and fineness of the curry. They are made of various curry pastes. Thai curry is known for being cooked in coconut milk. Lemon grass is the special ingredient of taste.


Let's see how to prepare this!
Ingredients:
For the green curry paste:
Lemon grass stem- 2 table spoon
Coriander              - 1 cup
Onion.                    - ¼ cup (roughly chopped)
Garlic.                    - 1 table spoon ( chopped)
Green chillies.      - 5-6 (10 for more spice)
Dhania.                  - 1 table spoon
Cumin.                   - 2 table spoon
Ginger.                   - 2 table spoons
Lemon juice.         - ½ table spoon
Lemon rind.          -¼ table spoon (optional)

For the curry:
Green curry paste - ¾th cup
Coconut milk.         - 1½cup
Oil.                            - 1 table spoon
Garlic.                      - 1 table spoon
Vegetables of your Choice, I have added
 Onion - ½ cup
Carrot. - ½cup
Beans.  - ½ cup
Potatoes- ½cup
Brinjal-.   ½ cup
Cabbage- ¼cup
Sweet corn - 1 cup
 You can also add broccoli, cauliflower, babycorn, capsicum


Recipe:
For the green curry paste:
  • Dry roast cumin and dhania
  • In a mixer jar, add the roasted cumin and dhania, coriander, onion, garlic, lemon grass stem, chillies, peppercorns, lemon jucie and lemon rind. Give it a nice grind.
  • The curry paste is ready! 




For the curry:
  • Heat oil in a pan
  • Add chopped garlic, lemon grass(optional as it is there in the paste),  onions and saute for 1min
  • Add the green curry paste and saute for  1min. 
  • Add vegetables of your choice and saute for 2min
  • Add coconut milk (grate coconut, add luke warm water, grind it, squeeze the milk out of the mix) and mix well
  • Let it boil for 2min
  • Add a pinch of salt and sugar according to taste and boil it for 2 more minutes

The curry is ready to serve with hot steamed rice!
