KHAO SUEY

The dish, khao suey, originated in Burma, Mayanmar. It came to East India, with Indians who migrated from Burma during world war II. It is associated with the street food in India
 It is a noodle soup with egg noodles and chicken, but to all the vegetarians out there. This recipe is for you.


 

Ingredients:

  • Boiled noodles - 1 cup
  • Oil.                      - 1 ½ tablespoon
  • Bay leaf.             - 1 
  • Green chillies.  - 2 chillies, chopped
  • Ginger garlic paste- 1 tablespoon
  • Onions               - ¼ cup
  • Coconut milk.   - 1½cup
  • Turmeric.          - 1 tablespoon
  • Madras curry powder- 2 table spoons
(Madras curry powder-Dried and roasted curry leaves, red chillies, roasted cumin, roasted dhaniya, mustard, pepper, grind to a fine powder)
  • Besan.               - 1 table spoon
  •  Curd.                - 3 table spoons
  • Vegetables according to your wish. I have used carrot, capsicum, cabbage, beans and potatoes.
  • Salt.                   - according to the taste
  • Cumin               - 1 table spoon
  • Coriander  powder- 1 tablespoon

Recipe:

  • To a pan, add oil, bay leaf,cumin and let it splutter. Add onions and saute for a few seconds
  • Add ginger garlic paste, green chillies and saute for 1-2min
  • To this, add turmeric, Madras curry powder, coriander powder and besan and saute for  1 minute.
  • Add curd to it and saute for a few seconds
  • Now add the vegetables to it and saute. Do not overcook the vegetables, it has to be crunchy.
  • Add some salt and 1 cup of water and saute for 2-3 minutes
  •  Add coconut milk to it and let it boil
The khao suey curry is ready
  

Assembly:

Pour the curry into the serving dish. Roll the noodles on a fork and place it in the curry.
Add chopped coriander, fried onions and chilli flakes on the noodles and serve it hot!



Supplements:

Fried onions, roasted peanuts, green chutney, sliced lemon.
