TACOS!!!
This tasty is a tasty Mexican dish. Taco means light lunch.
National Taco day is October 4th. There is a Right Time of Day to eat Tacos. Most people, any time of day is the right time of day to eat tacos, but there is actually a specific “taco time.” According to Mexican tradition, seafood tacos are meant to be eaten at lunch, while antojitos are to be eaten at dinner time.

For the shell
Corn flour/maize flour. - 2 cups
Maida. - 1 cup
Salt. - according to taste
Oil. - 2 table spoons
Water. - consistency based
For the filling:
Potato. - 3 medium(chopped)
Cumin. - 1tablespoon
Turmeric. -½ table spoon
Chilli powder - 1 tablespoon
Salt. - depends on taste
Oil. -2 table spoon
Cowpea. - 1 cup
For salad:
Vegetables of your choice, I used
Cabbage - ½ cup
Sweet corn -½ cup
Tomato - ½ cup
Capsicum. - ½ cup
Onion -. ½ cup
For sauce:
Mayonnaise - 1 cup
Green chutney- ½ cup
Recipe
For the shell:
- Add corn flour, maida, salt and give it a good mix
- Add oil and give it a mix, then add water according to the dough consistency.
- The dough should be well kneaded for 5-10min
- Rest for 20-30 min
- Make small round balls of dough and roll them, roll them into thin puris and prick them with fork and let them dry
- Heat oil in a pan, and fry the puris, lift two ends to give it the taco shell shape.
For the filling:
- Chop potatoes into small cubes. Boil it for 3-4min
- Strain the potatoes.
- In a pan, heat 3-4 tablespoon of oil. Add cumin, let it splutter.
- Add turmeric, chilli powder, and salt according to taste
- Add the boiled potatoes and give it a good mix
- Boil cowpeas with a pinch of salt.
- Add chilli powder and give it a good mix
For the salad:
- Add all the above mentioned vegetables or vegetables of your choice
- Add salt according to the taste.
- Add pepper powder
- Give it a good mix
- Also add lemon juice
- Add mint, coriander, ginger, chilli and salt in a mixer and give it a good mix
- In a bowl, add this chutney and mayonnaise and give it a good mix
Assemble!
- Taco shell is first filled with the potatoes
- Then add the cowpea mix
- Then add the sauce using a cone
- And finally top it with the salad
